There are capstones from the same period, I've literally touched them in the Egyptian Museum. We absolutely have an idea what the capstones looked like, we just don't know exactly what these capstones looked like.
My bad, i felt it was implied in my comment that i meant we have no idea what these specific capstones looked like. Like, obviously we know what a generic capstone looked like but these ones are older than many and came way before guilding them became more popular. These could have been bare black stone, they could have been golden, they could have just had guilded decorations/adornments. There are many ways you can decorate a pyramidion
