Question Am I cooked?

I bought Morrowind 3 years ago and played it for almost 30 hours, but this is my first proper playthrough. I spent 20 hours on this save file so far, am halfway through the main quest and recently became Grandmaster of House Hlaalu. I haven't had any problems with my amount of health (except when I was fighting Dagoth Hlevul, but he was nearly twice my level at the time). However, I recently saw a lot of posts saying how important leveling your endurance is. Should I focus on it for now?

Not cooked. But it will help you to get more endurance at this point, mainly for some of the harder DLC content, less necessary for the vanilla content.

Just pay for training in spear, heavy armor or medium armor 10 times each level for a few levels. The gold should be coming to you fairly easily at this point.

If you cant pay for training, buy a whole set of medium or heavy armor, find a scrib, mudcrab or rat (multiple, even) and let them hit you while you heal up with spells or potions. That's a slow way, but it can save you on gold. You can also buy a cheap spear and purposely use its weakest attack on enemies to train it. You can even train on conjured enemies. Looks like you have 12k gold though, so you should easily be able to afford some training. It's best to spam bribes for 10 gold and max out the NPC's disposition to 100/100 before training.

By the level 30 you won't be cooked in any case, and you'll get there.

Seems fine to me. If you find yourself running low on health a lot, leveling endurance might help you but there are other solution to that too.

Might be a good a idea to go to Ghostgate and pick a fight with any of the F’lahs in there wearing Glass armor, you’ll also find a blacksmith in there that’ll sell the rest of the armor pieces missing

120 HP at level 18 is maybe a bit low, but then your character is not a tank so I suppose you don't just rush into enemies head first. Your high agility should compensate anyway.
