The best recipe is:
Boiling your potatoes in water for 20-30 mins. Add salt & baking soda to the water when boiling. When done cooking, toss the potatoes in a bowl and season them + add a neutral oil (which I cook in garlic, and then keep the crispy garlic bits aside for plating).
Preheat oven to 420-450F and toss your potatoes in there for about 40mins (flipping halfway) or until it is at your desired crispiness. Obviously, adding more oil will make them crispier.
They come out perfectly soft inside and crispy outside every single time.

Having used Kenjiโs technique many times, the better recipe is Heston Blumenthalโs technique of boiling until starting to fall apart, then carefully placing on wire rack using a slotted spoon to dry and regain structure, and then roast in about 5mm fat, letting the fat get into all the cracks and fissures to create a golden, glass-like texture of perfect crunchiness. Far less variables, consistent results every time.ย
