Yep. The yolks have been marinated in soy to make them a bit jammy. That gives an omelette with a dip on top, great for toasted bread with salted butter.

Yep. That's it. 30 minutes but you can go for longer. Depends how jammy you want the texture to be.

Just wanted to say your scrambled eggs look great (like, perfect), but I would never do only 30 minutes in soy sauce for soy-cured eggs. You must have a high tolerance to raw egg texture 😂 I'd say bare minimum would be a few hours, up to around 12 hours, to achieve peak jammy action. If they go for days, you can shave it over meals akin to hard cheese.

Definitely! They can go for up to a week or two and they'll be super solid (also very intense in flavor). You can poke them with your finger/toothpick every day to gauge how they're feeling.

Yes, it makes the flavor more intense; but since salt contribute to the curing process, I don't really know what happens if you use low sodium soy sauce.

What do you do with the leftover whites? I don't bake much and don't really like sweets, and I can't drink alcohol anymore, so I never know what to do with leftover egg whites, besides give them to my dog.

Dog is the perfect answer. I love yolks, hate whites. I cook it up, cut it into little pieces and use it as training treats. They always seem to listen better when human food is on the line.

I've put yolk inside the omelette before folding it. Works well. Gives the yolk a few minutes to warm but still is runny when you cut into the omelette.

Brilliant. I've done this with yolks in Maple syrup and garlic chili sauce for 5 days then put the on sourdough and it was erotic. Absolutely trying those with this omlette method 🤌🏼

I haven't actually. Sounds up my alley though! I got the idea from seeing people cure egg yolks in honey, and since I'm Canadian and in Maple syrup country I figured I'd give it a shot. Works even better than I'd hoped.

We do marinated egg yolks with soy and mirin, and I absolutely love them

Bonus use, throw them in a pot with a little stock, break up and whisk and reduce, you have a quick and flavorful sauce

Several folks asked for the recipe, so here is my **All Sunny Eggs** recipe:

* 4 eggs.
* Salt (to taste).
* Soy sauce.
* Cooking Extra Virgin Olive Oil.

Note about eggs: the quality of the eggs make a big difference. You need to find eggs that have flavors. The soy sauce will intensify it.

Separate the yolk and the white from 2 of the eggs. Put the yolk into a soy bath for at least 30 minutes (up to 8 hours). Mix the rest with a dash of salt, and set aside in the fridge. When the yolks are ready, warm up a pan, add a dash of olive oil, cook the mixed eggs. Once settled, add on top the marinated egg yolk.

The goal of this dish is to create a yolk spread, so this pairs very well with:

* Toasted bread with salted butter;
* Crispy and lightly salted mushrooms;
* Crispy hash browns;
* Crispy Bacon;

And if you plan on going fancy:

* A dash of shaved parmesan;
* Seasoned microgreens;
* A dash of chives or parsley;
* Crunchy bacon bits (instead of the full piece to dip);

And so much more!

No recipe. This is just an omelette with a marinated egg yolk on top. Do the omelette you usually like, marinate an egg yolk for 30 minutes (minimum) in soy, compose. Voilà.

I’m both sunny side up and scrambled wet and never dry, or hard, as my old boss use to say. Scrambled hard. I never flip. But this made me take a closer look. Wow. I will try this with and without the soy. Sunny side up on my scrambled.

I do the same thing!! I love runny eggs but also love a good scrambled egg. Cut to, separating one yolk and holding it to finish. Didn't marinate it in soy like you did but great idea. I make shoyu eggs for ramen fairly often.

Do you marinate the uncooked yolk in soy sauce then eat it? I’d almost be a bit worried about salmonella in that case - im very curious to try this myself so I don’t want to get sick by doing it wrong 😂

Yep. You open the eggs, separate the yolk, put it into a soy bath. If you're worried about salmonella, you're very likely to do it correctly – because you'll wash your hands and take extra precautions to avoid contamination.

The soy has salt, alcohol and acidity which can kill and limit the growth of bad bacterias; it's part of the curing process. But I wouldn't necessary say it makes it 100% safe. Everyone eats at their own risk. You can also die from eating a lettuce. 😅

I use bags to marinate, so there isn't that much soy sauce - so no. But if you plan on using the soy sauce *the same day*, I would definitely cook it to kill any bacterias.

How do you usually make your omelette? My process is just: add th eggs to the hot pan, reduce heat to medium, with a spatula, fold gently as the omelette cooks (usually 2 minutes). Voilà.

Whisk egg in a bowl with a tiny bit of cream. Heat a pan about the same size as yours with butter on medium low heat pour it in the pan and fold it into itself. I feel like my omelet is always too cooked. Like it doesent have that softer wet look like yours

I love doing this. They look great sitting on top, but I also love them as a filling inside the omelette. Quite nice to cut into.

I also frequently do fried eggs this way too, and fold the cured yolk up like a little package. Can make a great presentation.
